Smoked Salmon, Avocado and Pawpaw Salad with Citrus Dressing (serves 4)
300g smoked salmon slices
½ ripe pawpaw, sliced with seeds removed
2 ripe avocado, sliced
2 cups salad micro greens
1/2 sliced telegraph cucumber
100ml olive oil
1 Tbsp cider vinegar
Rind and juice of 1 lime and 1 lemon
2 tsp runny honey
2 tsp Dijon mustard
Salt & pepper
Assemble a combination of pawpaw, cucumber, avocado and salad greens evenly onto four large dinner plates. Divide smoked salmon evenly between plates and place loosely over salad. Whisk the dressing ingredients together and pour over salad.
Serve immediately with crusty bread rolls and a glass of chilled Ataahua 2014 Rosé.
